So when taking the Eternal Monayer Trait out of Primal Sphere in the Fey, it gives you Monstrous Beast which allows you to build a Monster Class without having to use progression points. My question is how do you determine how many racial traits it gets, for example other traits might have Monster X, where X is the amount of species traits you make for that Monster as a monster gets none of your faction traits.

In this case you do not replace your Faction Traits since you are not using the Monster X ability. Instead these classes created get access to use traits from the Monsters of Myth and Legend. Great place to take additional class traits from.
The Primal Sphere is the ultimate for Nature, able to create monstrous primal creatures. This sphere was always seen as Natures Primal Essence so it opens up a lot of possibilities to create Fey/Monster type creatures.
